Fillet Steak with Stilton Blue
      
      
      
1 Fillet Steak about 4cm (1 and a half ins) thick
30 grams (1oz) Stilton Cheese
Melted Butter
Pepper
      
Heat grill thoroughly until it is as hot as possible.

Trim the stak and with a sharp knife cut a slit horizontally through the centre to form an inner cavity.

Stuff with half the stilton. Season with pepper.

Line grill pan with silver foil. Brush rack with melted butter also and also the steak. With meat close to the heat, grill the steak.

For a rare steak cook for approx 2 and a half minutes per side of steak or medium rare, 3 mins per side, medium 3 and a half minutes per side, for well done 5 mins perside.

Pile the remaining stilton on top of steak and put back under the grill for 30 seconds or so until the cheese is hot and melting.

Serve quickly pouring the juices from pan over the steak.
